 Real is Enough
Sommelier Pawel Paska on Wine That Moves You

Wine Is No Afterthought

At The Lobby Fizeaustraat, wine isn’t an afterthought. It’s a feeling. A choice that fits. Sometimes familiar, sometimes unexpected, but always hitting the right note. No snob talk, no wine jargon. Just something beautiful for the moment.

Pawel Pasca, our sommelier at The Lobby, embodies this like no other. He doesn’t try to impress with vintage years or complicated techniques. He wants you to taste something that suits you and leaves you quiet for a moment.

Wine Belongs With Food

Wine never stands alone for him. It belongs with the plate, the conversation, the evening. You can have it without food, sure, but the right pairing makes something special happen. The right combination lifts everything up. Not because it’s expensive but because it’s right.

Familiar and Surprising

You’ll taste that approach on the wine list. There are classics like Domaine Morey-Coffinet Bourgogne Blanc. Creamy, elegant, with a hint of oak. Comfort in a glass. But if you dare to try something new you’re rewarded too. Like the Mullineux Old Vines White from South Africa. Made from Chenin, Clairette and some other unknowns, it delivers that familiar Burgundy feeling from a completely different angle. A fraction of the price with three times the character.

A Bottle With a Story

Pawel chooses wines that move him. His favorite story is Terra di Sognu from Corsica. A bottle full of sun, stone, salt and stubbornness. It was born from the dream of a winemaker who fought for years for a piece of land, replanted everything and kept believing it would work out. The result isn’t perfect but it’s honest and you can taste that.

Dare to Step Outside the Lines

Sometimes Pawel is surprised by guests opening the wine list in unexpected places. Like an old Cotat Sancerre, very different from the citrusy Sauvignon Blanc many expect. Here you taste chamomile, honey, depth. A subtle invitation to discover. Or when someone dares to order something sweet, a German Riesling with residual sugar and fresh acidity. A Trockenbeerenauslese, almost impossible to pronounce but impossible to forget. Sweet doesn’t have to be heavy. It can be fresh and lively.

No Snobbery, Just Feeling

If the choices feel overwhelming here’s the good news. You don’t have to know anything about wine. You only need to feel something. Pawel listens to what you’re craving, what you’re eating and how you’re feeling. He’ll take care of the rest.

Because that’s what it’s all about at The Lobby. Wine that makes your evening better than you expected. Not the most expensive bottle but the right one.

Getting Here

In which part of the city are your hotels located?

Depends which V you’re crashing at.

Fizeaustraat : Tucked away in East Amsterdam (Amsteldorp, if you want to sound local). Leafy streets, hidden gems, zero tourist traps.

Nesplein: In the heart of the city, right in the old theatre district. Steps from Dam Square, wrapped in canals. The real stage is outside your window.

Frederiksplein: Central but lowkey. Next to the canals, near the Albert Cuyp market, walking distance to Museumplein. Classic Amsterdam, minus the clichés.

Oosterpark: Right in the middle of the park. Wake up to birdsong. Green outside, laid-back buzz inside. East Amsterdam at its most alive.

What is the address of each Hotel V location?

No mysteries here, just three spots to drop your bags

Fizeaustraat: Fizeaustraat 2, right behind Amstel Station. Easy come, easy go.
Nesplein: Nes 49, just a heartbeat from Dam Square and Rokin.
Frederiksplein: Weteringschans 136, 1017 XV Amsterdam. Or V-Lofts are located in another building just around the corner!
Oosterpark: Linnaeusstraat 2C, 1092 CK Amsterdam. Inside the park

Easy to find, impossible to forget.
